Fogo de Chão runs on the churrasco system, and the system is the show: gauchos circulate with skewers of fire-roasted meat and carve tableside for as long as your card shows green. Flip it to red to breathe; flip it back and the parade resumes. Picanha, the signature sirloin cap, is the cut to hold out for.
